Cheng-fa Tea Store opened in 1860 and is owned by Yen Tsan-cheng, a 90 year old man who has been working in this tea shop for his whole life.  He is the 4th generation to run the shop. It's a tradition that will stay with the family. The shop uses a traditional tea paper packaging that is no longer used by any other tea shop in Taiwan. The packaging is marked with antique red seals of store's name and blue stamps to label the tea. This paper packaging dates from the years between 1821 and 1850.

Neither black tea nor oolong tea, it's the best kept secret hybrid tea of Taiwan! This tea releases natural strong honey aromas that can only be created with help from tea farmer's both loathed and loved tea grasshopper. It lacks the bitterness yet retains the bold smoothness of black tea with an addition of oolong tea's depth and elegance. Honey Scented Black Tea softly wakes you up in the morning and the prominent honey aroma will pair perfectly with your afternoon sweet desserts.
Brewing
Warm up the tea pot with the boiling water, put about 3 grams of tea, and pour small amount of the boiling water into the tea and pour out. Then pour 225-250 ml of boiling water and cover tea pot for 3-5 minutes before serving. Boiling temperature is 90-95°C (195-205°F).
Why does homemade iced tea sometimes turn cloudy when refrigerated? Is this preventable?
Cloudiness in tea is caused by caffeine and tannins bonding with each other when tea is refrigerated or iced. The hotter the original brewing water the more caffeine and tannins are extracted from the tea leaves, and the murkier the beverage will be.
How do I prevent tea from clouding?
The only way to keep your tea clear is to keep it at room temperature. At room temperature the mini tornadoes never stop spinning enough to release the particles of tea that cause the cloudiness.  Just be sure to drink it all that day because it isn’t safe to keep room temperature iced tea around for long.
